Raleigh Way's Authentic Guacamole |
Guacamole is made from avocados, and served as an accompaniment to Mexican food, or can be eaten with tortilla chips. Generally, you find two types of avocados in the grocery store: Green skin (smooth skin) and Hass (bumpy skin). To me, the Hass have more flavor. When choosing avocados, pick the ones that are SLIGHTLY soft, but not too soft. The really hard avocados are not ripe. If you can't find avocados ready to use, you could buy them and allow them to ripen, which usually takes a few days. Some people say if you put them in a brown paper bag, they'll ripen faster. Hmmm... Why? |
IngredientsTo prepare the avocados, you will have halve them, and scoop out the pulp with a spoon. Avocados have a large pit, so be careful when slicing them in half or quarters.
NOTE: As with any recipe, adjust the ingredients to your liking. I always end up adjusting recipes as I go. |
PreparationSalsa is best made by hand. Place all ingredients in a bowl. Use a fork to mash and mix the avocado and salsa into a chunky consistency. Note about the Lime Juice: Avocado pulp tends to turn brown very quickly when exposed to air (oxidizes). The lime prevents this, and adds flavor. Lemons may be used also.
