Raleigh Way's Recipe for Chicken Curry Soup
This is something I invented in desperation for a low-carb recipe. |
I searched the Web far and wide for a low-carb chicken curry recipe, and came up empty handed, so I came up with my own version. This could be augmented with vegetables or whatever to suit your taste. |
Ingredients:
- Olive oil for frying and for blending spices
- 4-5 skinless, boneless chicken breasts cubed into spoon-sized pieces
- 1/4th medium onion
- 1/4th medium bell pepper
- 1 small package sliced mushrooms
- 4 garlic cloves (or more)
- 3 tsp cumin
- 3 tsp curry powder
- 2 tsp cinnamon
- 2 tsp allspice
- 3 tsp turmeric
- 1 can (14 oz) chicken stock (or more if you think necessary)
- Salt to taste (start with 1 tsp, and increase to taste)
- 2 to 3 tbs sour cream (to enhance texture of broth)
- Lime or lemon wedges for garnish
- Cilantro for garnish

Initial Preparations:
- Pour about 1/4th cup olive oil in Dutch oven or similar pot.
- Sauté chicken cubes till slightly golden brown. Stir frequently to avoid scorching.
- When chicken is ready, stir in mushrooms and simmer till slightly cooked - about 5 minutes. Stir frequently to avoid scorching.
- Put the following ingredients in food processor or blender with 1/2 cup of olive oil, and blend until semi smooth to create a spice mixture:
- 1/4th medium onion
- 1/4th medium bell pepper
- 4 garlic cloves (or more)
- 3 tsp cumin
- 3 tsp curry powder
- 2 tsp cinnamon
- 2 tsp allspice
- 3 tsp turmeric
- Pour spice mixture over the simmering chicken and mushrooms. Sauté for about 2 minutes. Stir frequently to avoid scorching.
- Add chicken stock, and simmer on low for about 10 minutes on low. Taste for salt, and add if needed.
- Stir in sour cream. Simmer on low for 5 minutes.
- Taste for "flavors" and adjust with whatever to suit your taste.

Assembly:
This will be served in regular soup bowls.
- Ladle the soup and chicken pieces into a serving bowl.
- Garnish the top with cilantro, and squeeze lime or lemon over everything.

- Potatoes (white, sweet)
- Serve over rice or serve with bread
